#230 – Peanut Butter Oatmeal Chocolate Chip Cookies

I know I’ve been doing a lot of baking and not a lot of knitting / crocheting, but all my yarn time has been dedicated to finishing up my contract work for another maker. Because of that, a girl’s got to have fuel to keep creating right? I was drawn to this recipe because it’s flourless and butterless!

While this sounds like an everything-but-the-kitchen-sink type of cookie, it actually worked out really well! I found that the oatmeal balanced the sweetness of the peanut butter and chocolate, so you didn’t end up with any aftertaste. In addition, the oatmeal makes it a very hearty cookie, so it felt quite filling to me.

This is a solid recipe for when you want cookies, but are missing some key staples. I don’t know about you, but my parents rarely had butter in the house unless I specifically planned a baking date and bought it myself. I suppose the beauty of being an adult and living on my own means that I could start stocking butter so that I can bake whenever I want! Do you have any must-try recipes for me?
