#229 – Matcha Mantou (饅頭)

After weeks of searching, I finally got my hands on some yeast, courtesy of my best friend! I was pretty excited since the grocery stores have been sold out of yeast for the last few weeks, and I’ve been meaning to do more baking. I wanted to have something that I could keep in the freezer and pull out whenever I got hungry.

While the twist looks complex, it was actually quite easy to make with the instruction video! I accidentally made my buns gigantic, so there wasn’t actually a lot to save in the freezer, but it just meant I had more to enjoy fresh.

In the future, I would recommend adding more milk or using more of the yeast mixture with the matcha half, since the added matcha makes the dough a bit drier. Surprisingly, my mom was not a huge fan of the matcha flavour, so maybe in the future I’ll just stick to plain buns.

I wish I could say that this social distancing has me craving the comforting flavours of my childhood, but if I’m being honest, I did not grow up eating mantous regularly. I guess at best, I’m nostalgic for the comfort foods associated with Chinese culture? Do you have foods from your heritage that you crave when things are challenging?
