#208 – Gingerbread Sandwich Cookies (Vegan)

So my friends and I have this running tradition since high school that we always get together around Christmas and bake an obscene amount of gingerbread / ginger molasses cookies. It’s always a highlight of the Christmas season for me, and I love how we’ve managed to keep it going for so many years. This year, we did gingerbread sandwich cookies!

Before you ask, yes, this is the same Lauren Toyota who used to work as a VJ host on Much Music! I remember coming home from junior high and watching her on TV, back when YouTube wasn’t quite as big and LimeWire was infecting computers everywhere.

Anyways! Our cookie dough came out a bit dry, but it was nothing that icing couldn’t save. We ended up just drizzling icing on top of our cookies rather than making sandwiches, but they were still pretty yummy. I think that in the future, we could try to add a bit more liquid to get the dough the right consistency.

I treasure this time together since the three of us don’t see each other very regularly, and I love that we all value this tradition enough to set a baking date each year. It’s such a blessing to know that we all have each other’s backs even after all this time.
