#207 – Salted Caramel Cookie Bars

This year, December has not felt particularly Christmas-y to me. I haven’t had a chance to buy/make any presents, and there are no Christmas decorations at my apartment, or at my parent’s house. The one thing that I have managed to do is to sneak in some Christmas baking, so I’m thankful for that!

My friend Ashley and I chose this recipe because of its potential to be stored in the freezer! The Christmas season is so busy that there isn’t always time for fresh baking, but if you can pull these bad boys out of the freezer and warm them up, that’s almost the same thing, right?

Our caramel did not look nearly as ooze-y as the ones in the blog post, but I really liked the texture of the cookie bar. Please do not skimp on the sea salt at the end! You really need the salt to contrast against the caramel flavour, otherwise it can end up one note and too sweet.

We made these cookies while watching a Hallmark Christmas movie! There’s something about the predictability of these movies that feels nice around this time of year. Are there any Christmas traditions that you love to keep?
