#195 – Apple Pie

Baking with friends is one of my favourite things to do — you get to spend quality time together and there’s something yummy to eat at the end! My go-to recipes are normally cookies (they tend to be less fussy/labour intensive), but my friend suggested trying apple pie this time!

In Edmonton, you’d be hard-pressed to find any food lover who hasn’t heard of Duchess Bake Shop. They have beautiful macarons, and their cakes are heavenly. I would wager a guess though, that my friend’s family recipe would give Duchess a run for their money.

Okay, full disclaimer, I have made pies before and they have never turned out as aesthetically as this one. I am not sure what kind of magic happened in my friend’s kitchen that day, but this pie had the flakiest crust while keeping the filling rich and juicy. I will say that maybe we should have used a bit of pie thickener (e.g., flour or cornstarch), because the filling was almost too juicy and ran a little bit.

I love the idea of passing down recipes in a family, and I hope that I will have my own box of recipes to pass down someday. It was so neat that my friend had this special recipe that was handed down to her. Do you have any family recipes?
