#376 – Lemon Bars

I was fortunate enough to be invited over to dinner at a friend’s house for Easter long weekend, and I knew that I wanted to bring a dessert that matched the occasion. To me, lemon bars have that fresh zest that I associate with spring, so I figured this was a good time to try a new recipe!

I know that this is a bit of a strange observation, but I’m pretty sure that this is my first time buying lemons. It’s never really been a flavour that I’ve baked with in the past, so I had no idea how to tell if a lemon is a good one or not. To be honest, this is something I regularly struggle with during grocery shopping, for all kinds of fruits and vegetables. I just hope for the best! Luckily, these lemons seemed to work well.

I really liked these lemon bars, and so did my friend. The one caution that I would add would be to take the suggested cooling time seriously. When they say two hours minimum, they really mean it. Unfortunately, I procrastinated a lot for this baking, and ended up bringing it half-set to my friend’s house. Luckily, it firmed up during dinner, but next time, I will definitely plan my time better. I would also say that the powdered sugar dusting is surprisingly important to balance out the citrus of the lemon. My friend actually thought the bars could’ve been even more lemony, but I was happy with the flavour profile. This would actually be a great dessert to make ahead of time!
