I know that I’ve posted about two different banana bread/muffin iterations on this blog already, but here is yet another recipe. This time, I went with a gluten-free recipe to use up some of the coconut flour I have in my pantry. To be honest, I didn’t love it, but I feel like both the good and less ideal crafting adventures should be documented.

I’ve tried a few different recipes from Ambitious Kitchen, and I do find the site to be a great source of paleo and gluten-free options. I’m just not sure if it’s the right option for me since I really do enjoy baking with flour and butter. I’ve also found that coconut flour can feel a little gritty, even when sifted, so I’m not sure if I’m just using it wrong.
At any rate, I’m still on the lookout for a go-to banana bread recipe, so if you have a favourite, please send it my way. I’ve had a default cookie recipe since I was in elementary, and I recently found a default brownie recipe, so I think if I can lock down this banana bread issue, I’ll be set for life.
