#234 – Walnut Brownies

I still haven’t really wrapped my mind around what makes food “paleo”, but no matter the label, these brownies were awesome. People joke about quarantine bodies, but what else are you supposed to do with all the extra time if not bake?

I really liked this recipe, as it wasn’t too sweet for me. With some recipes, I love the fudginess of a brownie, but even one piece can leave me with a too-sweet aftertaste for ages. With this recipe, I was able to eat several pieces with no aftertaste at all. Because of the danger that creates, it was crucial that I share. Lately, I’ve been spending time going back to my parent’s house in an effort to clean out my childhood bedroom, so I’ve been able to share my baking with them. This means that even though I wanted to eat the entire batch, I was able spread the love.

I learned from my mistake of last week and kept a very careful eye on the baking time, so these brownies stayed nice and moist. At some point I will probably liberate the 8″ x 8″ baking pan from my parents, but until then, it will be muffin pans forever. I do like having the baking portioned out into serving sizes, but it makes gauging baking times so stressful.
