#227 – No Bake Chocolate Almond Bars

I made these for the first time almost a year ago, and now that we’re all social distancing, it feels like a good time to revisit easy recipes. The title says it all – no baking, but all the sugar and flavour I crave.

I’m going to be honest with you, I don’t really know what a “paleo” diet involves. Someone said it’s based on foods that you could get if you were a hunter/gatherer, but I’m not really sure how almond butter and chocolate chips fit into that. I mean, I guess you could make your own almond butter, but chocolate chips have always seemed processed to me? Regardless, these bars were super yummy.

To be honest, I have historically not liked any nut butters. I actually had a mild peanut allergy as a young child, and even after I outgrew the allergy, I just never really liked eating nuts of any kind. As I get older, I’ve been trying to broaden my food horizons, and I think I’ve been missing out. The mix of chocolate and nuts works beautifully in a Reese’s Cup, and they work again here! These bars have a wonderful low work to high reward ratio, and the only thing stopping me from making these more often is the fact that sharing treats is much harder in social isolation. While I could easily eat a whole pan of this, I get the feeling that I shouldn’t.
