#221 – Banana Chocolate Chip Muffins

So with all the uncertainty right now due to COVID-19, it seems like many people have begun to bake as an outlet. I totally understand why – it’s hands-on, engaging, and there are yummy rewards for afterwards. Right now, everyone seems to love banana bread! I asked my friends for a trusted recipe, and I received lots of great responses.

I ended up using a family recipe sent to me by a friend, and I really liked how they turned out. I think the reason that people love banana bread so much is because we can tell ourselves it’s healthy (it has a banana in it!), while still getting that sweet cake-y flavour. Even if I’m wrong about the reason, I’m glad that there are so many great options out there that allow us to whip up a quick treat.  

Another nice perk of banana bread/muffins is that they keep quite well! Since I’m living alone now, I’m trying to avoid recipes that result in large yields. (For the record, the recipe I used made 12 muffins.) After all, I’m only one person and on top of that, we’re being encouraged not to share food at work now. I’m hoping that will be over soon, and that we can get back to sharing food soon. Eating together and sharing food is such an essential component of social and communal interaction, so I’m a little sad that we can’t have that right now. I understand that it’s a temporary sacrifice to help prevent the spread of COVID-19, and I’m willing to give that up, but I still miss it. It’s okay though, we can make it through this together, and if that means I get to eat more yummy baking for now, I can live with that too.
