#383 – Mini Peach Pie

It has been such a long time since I’ve made a pie, but when my friend asked me to do a baking date together, I jumped at the opportunity. She wanted to make a full size pie for her coworker, but there were enough leftover scraps for me to make a mini peach pie!

The last time I made a pie with a (different) friend, we struggled with the apple filling being too watery. This time, we were prepared with lots of cornstarch and heat to cook down the peaches. We also drained the frozen peaches several times throughout the process. This made a big difference in the final product, so I would definitely recommend it for all future pie making attempts.

In hindsight, the miniature size, while cute, was not very practical for eating because the ramekin was too deep. It also threw off the crust to filling ratio, so that might have to be adjusted for future mini pies. I wonder if there are shallower ramekins out there? I would say that mini sizes makes for great presentation, but maybe it’s plating that is better suited to mini brownies or lava cakes.

The funny thing is that even though I love baking and eating the treats afterward, my favourite part is still the actual process of baking with friends. There’s finally time to chat and catch-up, and sitting around in a warm kitchen with yummy scents is unparalleled. You don’t even have to be good at baking to experience the same feeling! I’ve had great chats with friends after plunking down the pre-made Pillsbury cookies onto a sheet tray, so don’t get intimidated by any recipes. Do you like to bake with friends?
