Once again, I am asking for recipes for ripe bananas, because a person can only make so much banana bread / muffins before you hit a limit. My most recent search led to these “breakfast cookies”, which attempted to use bananas to justify sweets to start the day. They ended up differently than I was expecting, but it was a fun baking experience nonetheless.

This recipe takes a bit of an “everything-but-the-kitchen-sink” approach, including oats, peanut butter, maple syrup, chocolate chips, and bananas. As a result, the dough can be a bit sticky, but it’s worth the effort to get these cookies on the pan! I will note that the recipe isn’t kidding when it says that the cookies won’t spread, so if you want flatter cookies, you’ll need to do a bit of smooshing, which I did not.
In my opinion, these cookies tasted better after they had cooled overnight! When they were fresh, the flavours hadn’t had a chance to settle quite yet, but by the next day, they made more sense together. These cookies are also very dense, so I found two cookies was just about the perfect snack size for me. I don’t know that I will make these cookies again as I’m not sold on bananas in cookie form, but I don’t regret trying! In a journey for creativity, as in life, sometimes things don’t always work out, and that’s okay too.
